Creamy Tuna Noodle Casserole
Irish Champ 2 lbs potatoes, peeled & halved 1 C milk 1 bunch green onions, thinly sliced 1/2 tsp salt 1/4 C butter 1 pinch black pepper Cover potatoes with water, boil until tender, about 20 mins. Drain well. Return to very low heat and allow the potatoes to dry out for a few minutes. (place a clean dish towel over the potatoes to absorb extra moisture) Heat milk & scallions until warm; mash potatoes, butter, salt and add milk/onion mixture.
