Microwave Sliced Baked Potatoes
Microwave Eggs with Spinach and Feta Ingredients: 2 whole eggs 2 egg whites 1/4 c. feta cheese, crumbled 1 1/2 c. fresh spinach, torn Salt and pepper to taste Directions: In a microwave-safe bowl, beat eggs and egg whites. Stir in cheese, torn spinach, and seasonings to taste. Cook 55 seconds on high. Stir and cook for additional 20-30 seconds until cooked but not dry.
I tried this recipe 2 nights ago and it works! I used Angel Food cake mix and Devil's Food cake mix. I topped it with 4 or 5 chocolate chips when it came out of the microwave...yum! Just be aware that the texture is lighter than regular cake. Great recipe when you want cake and you don't want to have all the extra cake staring at you, tempting you to eat more than you should!
Here's the recipe to make the mini molten microwave cake: 1/2 c. chocolate cake mix 1/3 c. water. Mix well in a cereal size bowl- microwave safe. Drop 5 teaspoons of hot fudge onto the batter. Microwave for 95 seconds. Top with ice cream or whipped cream. Yum.

Microwave Pumpkin Oatmeal For 1 serving: 1/3 cup old fashioned oats 2 T. canned pumpkin (a good way to use some of that leftover pumpkin from other recipes!) 1/4 t. pumpkin pie spice or a dash of cinnamon and a little nutmeg 2/3 cup water Put all ingredients together into a microwave-safe bowl, stir together and then microwave for about 2 minutes (depending on your wattage). Stir again and top with a scoop of ice cream!
