Corn Bread Taco Bake... It's like a Mexican shepherd's pie. I use ground turkey and homemade taco seasoning for the filling, along with frozen corn and a can of drained black beans. Top it will an easy homemade cornbread batter and forget the french-fried onions to make it quick, healthy, and delicious.
Brown your ground beef and drain completely - then add refried beans, taco seasoning and about half a can of tomato sauce. Mix together and scoop into taco shells, (stand them up in a casserole dish). Sprinkle the cheese on top and bake at 375 for 10 minutes!!!!!!
Taco Bake-not just a cute pic I really tried this and it was pretty good. Easy to do. Not my eating style (mega-nutritious), but great for peeps that won't eat vegetables. I renamed it Taco Pizza. Could be varied many ways but I made it as written. Nutritional breakdown based on serving 6: Cal-380 carb-25 Fat-19 protein 26 sodium-1075
Mini Tacos! Fill wonton shells with cooked taco beef, salsa + cheese. Honestly takes 5 minutes to bake at 425. Could not be easier or tastier! You could actually put anything you want in these, eggs + bacon + cheese, maybe dessert fillings, the possibilities are endless! Love love them!
