Crock Pot Minestrone Soup - When I made this I had a Bob's Red Mill "whole grains and bean soup" mix on hand so I used that instead of the noodles and canned beans. I added a little more liquid because of that and used one less bay leaf. It turned out delicious and the soup mix made it hearty and filling.
