Stuffed Jalapenos will quickly become your favorite appetizer! Filling combines cream cheese, bacon, garlic and sun-dried tomatoes. Divine!

Armadillo eggs...MY recipe: 9 jalapenos, cut in half & cleaned (all veins & white removed - wear gloves!), 8oz cream cheese, 1/2 lb breakfast sausage, cooked, crumbled & mixed with cream cheese, 9 slices maple bacon, cooked about 2-3 minutes in microwave (not done!). Load peppers with cheese/sausage mixture, wrap with bacon strips, pin with toothpicks. Bake at 350 until bacon is crisp! YUM YUM

Sausage Stuffed Jalapeno. 1 pound ground Italian sausage). 8 oz cream cheese, softened. 1 cup shredded cheddar cheese. 1 pound jalapenos, halved lengthwise/seeded. 1 green onion, finely chopped. Preheat oven to 425 degrees. Cook sausage in a skillet over medium heat, drain. In a bowl, mix sausage, cream cheese, cheddar cheese, and green onion. Spoon 1 TBS sausage mixture into each jalapeno half. Arrange stuffed halves in a baking dish. Bake 20 minutes, until bubbly and lightly browned.

Stuffed Jalapenos!! NOTE: Mix the insides of the jalapenos into the cream cheese/sausage mixture. Use HOT pork sausage.
