Saw something similar on Pinterest but spun it to my liking: make the quinoa/rice as directed on the box; preheat oven to 350; drain the beans and mash as best you can; add 3/4 cup Parmesan cheese; mix and add the quinoa blend; use your clean hands to mix well and form balls to bake; place on parchment; bake for 15-20 mins (based on individual size); should be golden on outside. Serve warm with your favorite dip or some olive oil! Like a tater tot but healthy!!
