A little while ago in preparation to cook a meal with lentils, I cooked 1 cup of dried lentils. I forgot just how much cooked lentil you get from 1 cup of dry! From it I prepared the Sheppard’s Pie, the Lentil with Paneer croutons soup and with the remainder I decided to try a vegetarian spaghetti Bolognese. Here the lentils are a direct substitute for ground beef, everything else is authentic for Bolognese sauce. Even meat lovers will enjoy this, it’s very tasty and much lower in calories!
