My good friend Alex has been experimenting with my recipes and asked me to provide a chicken parmigiana recipe. It was a good idea as this is the type of dish our daughter’s love, so this one is for you Alex! You can use either regular bread crumbs or an alternative is to go with a gluten free version. Due to the rice content the GF bread crumbs tend to stay crunchier than regular variety; we actually prefer GF as regular bread crumbs can get soggy as they more readily soak up the tomato sauce.
