3lbs small potatoes 1/4 c olive oil 1.5 tsp salt 1 tsp ground black pepper 2 tbs minced garlic (6 cloves) 2 tbs minced parsley Preheat oven to 400. Cut potatoes in half or quarters and place in a bowl with olive oil, salt, pepper, and garlic; toss until well coated. Transfer to a sheet pan and spread out (1 layer). Roast 45mins to 1hr or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning. Remove from oven & toss with parsley, season to taste.
