healthy Thai Shrimp Salad
Prawn mango noodle salad Cook the noodles according to the packet instructions, then drain well and rinse under cold running water. Place in a large bowl and add the prawns, cucumber ribbons and diced mango. Whisk together the oil, lime juice, soy sauce, ginger and chilli sauce and season with salt and freshly ground black pepper. Pour over the noodles and toss well to mix. Add the coriander and chilli flakes and chill for at least 30 mins before serving.
