Hot & Sour Soup...this is the closest to a legit Chinese restaurant (legit American Chinese) broth I have found...I had a can of La Choy Fancy Vegetables, box of sliced shitake (or any other type of shroom...even canned works), and egg whites. Oh, and I add couple squirts of sriracha. End result is about 65 calories for 1.5 cups. Delightful.
Lobster Bisque. - 6 c Water 2 c Dry white wine 2 c Fish stock 2 each 1¼ to 1½ lbs. live lobster ½ c Melted butter, salted 1 c Onions, finely diced ½ c Carrots, finely diced ½ c Celery, finely diced 1 tsp. Cream of spinach soup in vitamix! Spinach (1/2 lb or 2 big handfuls), 2 Tbsp onion, 1 tsp olive oil (optional), 1/2 avocado, 3 oz (or 3 chunks) tofu, 2 cups veggie broth (or just water + seasoning), garlic (optional), cinnamon, hot madras curry powder (or just turmeric). Start blender at 1, quickly increase to 10 then switch to high. Blend 5-7 minutes (until steam comes out from top), salt and pepper afterward. Alter it anyway you want - so good/healthy!
