Spicy Garlic and Lime Black Bean Enchiladas. I'd have to figure out an acceptable substitute for red enchilada sauce, which is absolutely disgusting from a can, but otherwise these sound good. There's brown rice in them! Oh, and I'm contemplating starting a new pinboard just for enchiladas. I think I may have a problem.
