Bean Burritos. Stock freezer for single serving dinners/lunches. Wrap individually in plastic and freeze up to 3 months. To reheat: Microwave only: Remove frozen burritos from plastic wrap. Place on a microwave-safe plate, covered with a microwave-safe bowl, and defrost at high power for 3 to 4 minutes; uncover, and microwave on high, 3 to 4 minutes longer.

Pasta con i broccoli 1 small head of fresh broccoli 1 onion extra virgin olive oil salt pasta (pennette rigate, in this case). Wash and cut the broccoli. Boil the broccoli in salted water for 15 minutes. In the meantime cut the onion and put it in a pan with a drizzle of oil and brown it. Drain the broccoli (BUT save the water!) and add it to the pan with the onion. Use the broccoli water to cook the pasta. Drain the pasta and add it to the broccoli. Buon appetito!
