**Ingredients** 1 packet of unflavored gelatin (such as Knox) 6 oz hot water 1 heaping tsp instant coffee (such as Trader Joe's 100% Columbian Instant Coffee) 1 c heavy cream ¼ c erythritol or your granular sweetener of choice (Makes it lightly sweet. Add more if you prefer sweeter). **Directions** Combine everything. Divide into 4 6oz ramekins. Cover and refrigerate for an hour before eating. Just under 2 g carbs

How to cook the perfect bacon. Line a baking sheet with parchment paper. Line up 4-6 slices of raw bacon on paper. Stick it in UNHEATED oven. Do not preheat! Bake at 400 degrees. After 13 minutes start checking to make sure it's cooked the way you like. On my oven, I always cook it for 16 minutes - I like it somewhat crispy.

I love potato chips so much and kale chips just weren't cutting it for me on this super low carb keto diet. Oven baked piles of shredded parmesan really hit the spot. Baked in small flat piles on parchment paper for about 5 to 7 minutes at 350 degrees. Still not very healthy but definitely a much lesser evil than a potato chip. I get full and satisfied way faster on just a few of these, too, while I could easily finish off a party sized bag of kettle chips.

There's about 2 grams of carbs in each of these keto friendly homemade bacon cheeseburgers. Oopsie rolls instead of buns!
