Use a Magnetic Rack to Store Knives - I have been using this under my kitchen cabinets for years. It is an idea i borrowed from my Brit friends. A space saving measure. Plus, it works really well. You can even put a can of herbs at the far end (so it doesn't get hot from the stove) and it will always be within reach. :)
