Reminds me of this similarly inexpensive and elegant soup... Heat 4 cups of frozen green peas in enough water to cover them, until tender and cooked through. Put the peas and water into a blender (in batches, if needed) with 1/2 cup of heavy cream/half and half/whole milk, a good pinch of coarse sea salt, and a generous grind of black pepper. Throw in an herb of your choosing, too. I like fresh mint, but dried parsley or tarragon also work. I also add a tablespoon or so of olive oil, and purée. Then, I reheat gently, and serve with croutons. Like the lettuce soup, it's VERY green.
