Love taste of home!!!!! Taco Salad. I didn't add olives because I don't like them, but substituted a can of corn & a can of black beans. I also used a full bag of cheese vs. a cup. To keep things from getting soggy, I kept the meat/bean mixture in one container, the lettuce/cheese in another, and the rest of the ingredients in 3rd container.
Quinoa, black bean, avocado, red onion, tomato, cilantro, cumin, lime. // This was my first foray into the world of quinoa. When you eat this warm, it tastes like a hearty vegetable chili. Ate it cold the next day on a bed of lettuce. Both were great! Teen Girl tried it and liked it. Teen Boy wouldn't try. Rating: A Keeper
