30-Minute Coconut Curry - I left out the chickpeas, and used red curry paste instead of red chili paste- oops. Probably added more of the spices than called for- I didn't measure. I also used green curry paste. Pretty tasty!

GLUTEN FREE & NUTRITIOUS OATMEAL ALMOND FLOUR COOKIES. These were great! I used half honey, half maple syrup for the sweetener. I don't like raisins in my cookies, and didn't have any chocolate. Just used whole pecans. Yum.

Fudgy Coconut Flour Brownies. Going in the oven now. We shall see.... *next day* These were pretty good... I halved the recipe and added pecans. They were not as moist as box brownies, but a good scoop of coconut bliss ice cream made them perfection.

Last-Minute Protein Energy Bars. I really only took inspiration from this recipe. I threw together oats & protein powder for my dry ingredients, and peanut butter, maple syrup, and vanilla extract for my wet ingredients. I made a chocolate glaze with cocoa powder, coconut oil, and a little maple syrup. More of a sweet treat than a protein bar. They are in the freezer. We shall see. *later on* Pretty tasty! Easy to throw together (less than 15 minutes), decently healthy, and very yummy.

Juicy Roasted Chicken. My first ever roasted chicken! I am using butter instead of margarine. Still in the oven. We shall see... *Update* Absolutely delicious!! Incredibly tender and juicy (I did baste it a few times). Will definitely keep this roasting method around.

Paleo Cereal: Coconut Crunch. This was pretty good... took forever to chew each bite, which made it quite satisfying. I used pepitas, walnuts, sunflower seeds, chia seeds, and coconut flakes. Topped with whole milk.

Coffeecake Muffins - These were pretty good! We used kefir instead of sour cream (didn't have any on-hand) and they were great. I'd take them to a brunch or serve them to guests. Very cute.

roasted sweet potato, kale + sage skillet quinoa. I didn't use sage, but threw in several other herbs I had. I cooked the quinoa in veggie stock, and added a can of corn at the end. Tasty and so healthy! Keeper.

The Best Apple Crisp You’ll Ever Have {with brown butter, vanilla bean, + bourbon}. This really was delicious- more than enough topping. Worth the little extra effort. Definitely a keeper.

Simply Sour Cream Chicken Enchiladas - Easy to assemble, deliciously creamy, and there is NO canned cream soup in this recipe. I made this and wow! It's a keeper. GREAT recipe to give for a meal train. Bake covered with foil for 1 hour if frozen.

Creamy Artichoke Spinach Dip. Make this delicious, dairy-free artichoke and spinach dip - without any processed vegan cheeses or creams, and also without oil. - This was really good. I did miss the cheese in the traditional recipe, but this was pretty good on its own feet. I'd make it again. Easy to make. I used canned artichokes, not frozen.

Skinny Monkey cookies. These were OK. The banana flavor is too strong, and the peanut butter too weak. I ended up adding some chocolate chips (which I think defeats the purpose of these...).

Vegan Butternut Alfredo! Easy to make, very delicious vegan white wine cream sauce!!! This was suuuuper tasty!! Subbed fresh rosemary for the sage, because I had none, and added Panko crumbs to the top and baked it golden. Will definitely make again.

Matkonation's Falafal. I compounded a couple of different falafel recipes, but stuck pretty closely to this one. These were amazing. I will definitely make them again when I want to make something special.

Curried quinoa & avocado wrap. This was quite good- the main thing is the curried quinoa. I didn't really follow this recipe at all... but I'd make something like it again!

Veggieful: Vegan Tzatziki Recipe. This was a wonderful compliment to the falafel gyros I made. I didn't have any cucumber, but I added dill and it was delicious. Non-vegan roommate-approved. :)

Peanut Butter Pie by Alicia Silverstone. This vegan pie is to-die-for. Absolutely decadent and delicious, simple to make. Definitely a keeper. I made my own crust by crushing vegan chocolate cookies and combining them with melted Earth Balance. The only problem with that was the crust kept puffing up in the oven when I was trying to toast it, so I patted it down. It didn't affect the crispiness of the crust, though. Sometimes you just gotta experiment and keep your eye on it. I'd do it again.

Hummus & Grilled Vegetable Pizza. So, so delicious. Will be making this again!

Banana Maple Oatmeal Cookies with no added fat or refined sugar. These tasted really good- but the finished texture was more like a muffin than a cookie. I also made a simple glaze to drizzle on top, because I wanted them to be a little sweeter. Good recipe- just not really like cookies.
