No-Bake Energy Bites 1 cup (dry) oatmeal 1/2 cup chocolate chips 1/2 cup peanut butter 1/2 cup ground flaxseed 1/3 cup honey 1 tsp. vanilla
Microwave popcorn, no bags, no butter, no oil!!!! Glass bowl + ceramic plate + popcorn kernels = perfectly popped popcorn in the microwave. No bag. No butter or oil. Nothing to throw away afterward. And even no un-popped kernels. Take 1/4 cup of dry popcorn kernels, place in the bottom of a microwave-safe glass bowl (pyrex is a great choice). Place microwave-safe plate on top of the bowl. Plate should be wide enough to go beyond the rim of the bowl. Microwave for 2 minutes 45 seconds.
Maple-Cinnamon Roasted Chickpeas. oh my. yes! (my version is lacto-fermented to make them easier to digest. Just soak dry beans overnight up to a couple days in water with a teaspoon of yogurt or raw milk - lemon or vinegar if you're lactose intolerant. Drain off & cook in a pot of boiling water; then follow the recipe on this link.)

Stopped buying the jar stuff once I tasted this homemade salsa. Simple and delicious: Chop 5-6 Roma tomatoes,1 small onion and 1/2 cup fresh Cilantro. Mince 2 seeded Serrano or Jalapeño peppers and 1 clove of garlic. Add 2 tbsp. freshly squeezed lime juice and salt and peper to taste. Mix everything together and let sit overnight for flavors to meld.

taco balls: 1 pkg, jumbo crescent rolls, 3 oz cream cheese, 1/2 mexican shredded cheese, 3/4 c shredded chicken, 1/3c taco sauce, 2 tsp, taco seasoning mix, 1/4 c cheese for sprinkling.350 oven 10 min or til golden, ( put cream cheese and shredded cheese in the microwave and nuke for 30-40 sec till softened and add other ingredients , roll in crescents and bake!!
