Pepperoni Stuffed Chicken - top with the marinara sauce. Use whole breasts instead of the halfs, and stuffed each one with 3 slices of pepperoni and a half ounce of shredded mozzarella. Bake in the oven versus pan frying, and didn't use the flour for coating. 7oz chicken breast was approx 385 calories. Served w/ a salad and garlic bread.

Corn Casserole 1 box Jiffy 1 can cream corn 1 can whole kernel corn, drained 2 eggs 1 stick butter, melted 1 Cup Sour cream Mix all together in casserole adding the sour cream last. Bake in 350 oven for 45 minutes. I make this every year....u can double & triple it. Family favorite

Cranberry Jello Salad... 1 can jellied cranberry sauce, 1 (3 oz) box raspberry jello, 1&1/4 cup boiling water, 1 sm. can crushed pineapple (drained), 1/2 cup chopped walnuts. Add boiling water to cranberry sauce and jello & stir well. Then add crushed pineapple and stir. Nuts can be used to top jello salad or mixed with pineapple. Chill for a few hours (this recipe can be doubled for a 9 x 13" dish)
