Cauliflower Fried Rice - Grate cauliflower, heat 1 TB. olive oil in pan, stir fry 1/4 cup chopped scallions and 2 tsp. garlic...add cauliflower, cook 4-5 mins...don't overcook..stir in 1 TB. soy...push over to side of pan and cook one egg, scrambling it.....mix together with cauliflower mixture...sprinkle with green onion tops...would be good with marinated chicken.....
