Crockpot Corned Beef and Cabbage 4 lb. corned beef brisket 1/2 tsp. pepper 3 TBSP. vinegar 1 head of cabbage, cut into wedges 3 TBSP. sugar 6-8 red potatoes cut into wedges (or quarters if you prefer) 10 baby carrots Combine all ingredients in a slow cooker. Veggies on the bottom and lay the cornbeef on top. Cook on High for 1 hour, then on low 6 or 7 hours. *note - put in the cabbage in during the last 30 minutes of cooking, placing it on the top. It will be cooked but not mushy
