Spaghetti Squash Cakes 2 egg whites ¼ cup whole wheat flour 2-3 cloves of garlic grated 1 ½ cups of cooked spaghetti squash About ¼ cup finely diced sweet onion Salt & Pepper Whisk the egg whites and flour add remaining ingred. Mix well. Place 14 cup in sprayed skillet. flatten. 3-5 min side. serv: 2 cakes 60 cal 2 WWp. (I left out peppers - think of other additions)

Chipotle's Cilantro Lime Rice 1 tbsp veg. oil 2 tsp fresh chopped cilantro 1 fresh key lime (or ½ regular lime) ½ tsp kosher salt 1 cup long grain white rice or basmati 2 cups water Sautee the rice in oil until almost translucent. Add water, bring to a boil. When water begins to boil, turn heat to low. Simmer, covered for 15-20 minutes. Turn off heat. DON'T PEEK. LEAVE IT COVERED for 30 minutes. Remove lid, mix salt and juice together until dissolved. Pour over rice and add cilantro.

Zucchini Fritters: I make these every summer when the zucchini comes in. A friend from Turkey used to make them when I was in grad school and they were so tasty, I had to learn to make my own. I don't put the scallions in. It's very important to let the zucchini drain. And if you don't have yogurt to dip them in, sour cream works just fine. Mmmm.
