We love a good mexican meal, and this definitely tasted more decadent than the calories/points you were taking in. The meal is easy to prep- one skillet to cook, a bowl to mix, and then you assemble it all in a baking pan. The only change I would make next time, would be to add a layer of cheese in the middle since the only bite of cheese is from the top. Nice easy, hot meal that you can get on the table in an hour. Bubble Up Enchiladas, Weight Watcher Recipes - (may use either ground Turkey or Beef) Just made this for dinner and O.M.G. was it delicious. I used whole wheat reduced fat biscuits and I thought they added something to the dish, although next time I will use a few less biscuits. I'm already looking forward to lunch tomorrow!
