Marinated Mozzarella 4 buffalo mozzarella, sliced 2 cloves garlic, thinly sliced 30g preserved lemon rind ½ cup olive oil 2 TBLS olive oil, extra 12 basil leaves crispy flat bread Place mozzarella, garlic & preserved lemon on a platter & spoon over the oil. Cover & refrigerate for 1 hour. Heat extra oil over medium heat. Cook basil 30 seconds until bright green & crispy. Remove from pan & drain on absorbent paper. Top mozzarella with crispy basil leaves and serve with flatbread.
