Loaded Baked Potato Dip: sour cream, bacon, shredded cheddar cheese, scallions or chives optional: pkt ranch dressing Combine all ingredients in a medium bowl; refrigerate at least 1 hour before serving to allow flavors to meld together. Garnish with extra shredded cheese, crumbled bacon, and chopped chives. Serve with your favorite potato chips or pretzel crisps.
Preheat oven to 400 degrees F. Brush both side of potato slices with butter; place them on an ungreased cookie sheet. Bake in the oven for 30 to 40 minutes or until lightly browned on both sides, turning once. When potatoes are ready, top with bacon and cheese and continue baking until the cheese has melted.

bite size apple pies ***Tracy's Note: I'm making these right now. I've revamped the recipe and I'm using refrigerated crescent rolls instead of refrigerated pie crust. ***In a word - DELICIOUS! The crescent dough works well. I used Macintosh apples for my attempt. Also drizzled half of them with maple syrup. Tracy tested - Tracy approved :)
