This recipe is AMAZING!!! I brined 30 lbs pork which yielded 8 1/2 cups meat as there is a lot of fat with this pork shoulder. I baked for 13 hours to 197 degrees. I defatted as much as I could and added additional rub. The rub is the key to the taste. I mixed in a little Sweet Baby Rays BBQ sauce and all I can say is WOW.
