Pesto Ranch Crock Pot Chicken Thighs ~ This slow cooked chicken dish could not get simpler. You literally toss the ingredients into the crock pot, close the lid and forget about it for a few hours. Love that!! The chicken comes out perfectly tender with flavorful pesto seasonings throughout. I like serving this chicken with my favorite mashed potato recipe and a little side salad. Ok, I'll admit that I've been guilty of using pre-made taco seasoning packets, but I don't think I'll ever use them again! These tacos were excellent! They had amazing flavor, and I love that you can create that with pantry staple spices--plus, without all that sodium in the packets. The lettuce wraps are messy (or at least I need to work on making better ones), but I love that it's a low carb option. Love love these. Stir together Cream Cheese, Shredded Cheese, and Taco Seasoning. Fold in the shredded meat, Divide the mix into the tortillas and roll up. Spray the tops with cooking spray and bake for 30 minutes at 350. (flip them at 15 minutes) Garnish with sour cream...and chives...and salsa...and more cheese :)
