    I added diced cucumbers and avocado to this. Delicious! The red wine vinegar was a nice change from the rice vinegar or white vinegar we usually use in this sort of chopped salad.

    This was delicious! One child rejected it, but what else is new. The child who enjoyed it said she would take it for lunch, so that spells success in my book! I made a few changes: diced tomatoes and tomato paste instead of tomato sauce (I was out) and no red pepper flakes.

    This worked out really well. I enjoyed it. The rest of my family ate or did not eat this with no comment, so I have no idea what they thought. It would be nice to hear some positive feedback, but I suppose I should be grateful for the lack of whining.
