For anyone that may not know, the BEST way to make "hardboiled" eggs is in the OVEN! Place the eggs in a muffin tray so they do not move around, turn the oven to 325 degrees, pop in for about 25-30 minutes and remove! Not only are they tastier, but they also are much easier to peel! // never heard of this but definitely want to try it!

The Best Apple Pie Muffins Ever: Used 1/3 c oil and 1/3 cup applesauce. Also used 1 1/2 c flour and 1 c wheat flour. Do not have buttermilk in China so added 1 T lemon juice to regular milk.

Pumpkin Pie Oatmeal -- Also made this for brunch & it was yummy and super fast to make! If you're making it for 2, double everything (except the banana) so you have enough. And add more milk at the end to make it creamy & some brown sugar to sweeten it. I skipped the blueberries since I didn't have any and it still tasted great.

Homemade Apple Fritters!!! 15 minute recipe! For a healthier non-fried alternative: I turned this into an apple cake of sorts. Used 1/2 spelt, 1/4 white rice flour, 1/4 tapioca flour, vanilla sugar (sugar that has vanilla bean "soaking" in it), 1 T coconut oil (butter replacement), 1/3 rice milk for the milk. Greased the 8x8 pan. Baked at 350F for about 25 minutes.

Caramel Glazed Apple Bread Bread: ■1 1/2 cups shredded apples ■1 cup brown sugar ■1/2 cup buttermilk ■1/2 cup vegetable oil ■4 eggs ■3 cups flour ■1/2 cup pecans ■2 tsp baking soda ■2 tsp cinnamon ■1tsp salt ■1 tsp nutmeg Glaze: ■2 tb butter or margar ■1/4 cup brown sugar ■1 tb milk ■1/2 cup powdered sugar Heat oven to 350°F. Grease bottoms only of 2 (8×4-inch) loaf pans Bake 45 to 55 minutes
