Crock Pot Chicken Tortilla Soup. Simple and delicious. Make with chicken breasts instead of thighs for a healthier alternative. If you use chicken breast, it becomes very tender when cut into small pieces. If you anticipate having leftovers, don't add tortilla strips to the whole pot otherwise they will get soggy. Top with avocado, monterrey jack cheese and a squeeze of lime. Good served with grilled tortillas.

We replaced Cows Milk with Coconut Milk since we are dairy free and it works great. Enjoy!
