Stir together Cream Cheese, Shredded Cheese, and Taco Seasoning. Fold in the shredded meat, ( I would use beans) Divide the mix into the tortillas and roll up. Spray the tops with cooking spray and bake for 30 minutes at 350. (flip them at 15 minutes) Garnish with sour cream...and chives...and salsa...uhh yum!

I'm re-pinning this recipe. I just made this tonight with Paula Deen's Cornbread Casserole and triple chocolate brownies. BIG hit with family, easy to make and plenty for company. . . I added olives, used chipotle season I stead of cayenne and I added a bit of cilantro. It's easy to adjust to your families taste. Enjoy!!
Doritos Crusted Chicken Fingers - 4 boneless skinless chicken breasts 1 large bag of Doritos, nacho flavor (or flavour of choice), 2 cups buttermilk, 2 cups flour, 4 eggs. Marinate sliced boneless chicken breasts in buttermilk for 2 hours. Dredge in flour. Dip in egg wash. Dredge in crushed Doritos. Bake in a 400F for 15-20 minutes. Yum!!! Everyone knows I have an obsession with Doritos!
