Okra: Add one pound of sliced okra to a pan. Cover with water and cook for 5 minutes. Add one 14.5-ounce can of stewed tomatoes, 1 green pepper and 2 tablespoons of chopped onion. Simmer for 15 minutes. Add salt and pepper to taste.

Healthy Recipes for Summer's Freshest Ingredients

Toss chopped peppers, potatoes, zucchini, red onion and sausage with olive oil, salt, pepper and garlic powder. Seal in an aluminum foil pouch and bake at 400 for 40ish minutes. You can also grill this. Made with turkey instead of sausage and no zucchini because I didn't have any. Also added a few extra spices. Pretty good =D

Pineapple Upside Down Pancakes: Made them and they turned out okay but I think my pineapple slices were too thick so I couldn't get them to fully cook! Gonna try again tomorrow!

Skinny Wendy's Frosty! 3/4 cup almond milk, about 15 ice cubes, 1/2 tsp vanilla, 1-2 Tbsp unsweetened cocoa powder, 1/3 of a banana

Skinny Chicken Salad : 1 lb. chicken breast (chopped); 1/2 c. diced red onion; 1/2 c. diced apple; 2/3 c. grapes, halved; 1/3 c. dried cranberries; 1/4 c. sliced almonds; 1/2 c. Greek yogurt; 1.5 T. lemon juice; 1/2 tsp. garlic powder; salt pepper.

2 ingredients cookies: 2 large old bananas + 1 cup of quick oats. You can add in choc chips, coconut, or nuts. Then 350 for 15 mins.

pinner says "I now eat egg and cottage cheese scramble 5 days a week. Simple, delicious, healthy and keeps me full until lunch. 2 egg whites and 1 whole egg with 2 tbls of cottage cheese. Makes for creamy scrambled eggs!
