Okra: Add one pound of sliced okra to a pan. Cover with water and cook for 5 minutes. Add one 14.5-ounce can of stewed tomatoes, 1 green pepper and 2 tablespoons of chopped onion. Simmer for 15 minutes. Add salt and pepper to taste.

Toss chopped peppers, potatoes, zucchini, red onion and sausage with olive oil, salt, pepper and garlic powder. Seal in an aluminum foil pouch and bake at 400 for 40ish minutes. You can also grill this. Made with turkey instead of sausage and no zucchini because I didn't have any. Also added a few extra spices. Pretty good =D
Pineapple Upside Down Pancakes: Made them and they turned out okay but I think my pineapple slices were too thick so I couldn't get them to fully cook! Gonna try again tomorrow!

Skinny Chicken Salad : 1 lb. chicken breast (chopped); 1/2 c. diced red onion; 1/2 c. diced apple; 2/3 c. grapes, halved; 1/3 c. dried cranberries; 1/4 c. sliced almonds; 1/2 c. Greek yogurt; 1.5 T. lemon juice; 1/2 tsp. garlic powder; salt pepper.

Saltine Toffee. Really easy & really yummy! Best to use a cookie pan rather than a sheet so it doesn't spill off in the oven. However, I used my really flimsy old cookie sheet covered in foil, and so I was able to flex the cookie sheet to break the toffee apart. So maybe next year I'll use that cookie sheet again afterall.
