Baked Chicken Fajitas Preheat oven 400 Grease 13x9 baking dish. Place 1lb chicken breast strips in bottom of dish. In a small bowl combine: 2 tbsp olive oil, 2 tsp chili powder, 2 tsp cumin, 1/2 tsp garlic powder, 1/2 teaspoon oregano and 1/4 tsp salt. Brush spice mixture on top of chicken strips. Top 1 15 ounce can diced tomatoes with green chilies, 1/2 green bell pepper cut into strips, 1/2 red bell pepper cut into strips and 1/2 onion cut into strips. Bake uncovered 20-25 minutes.
