8 crusty dinner rolls; 8 large eggs; 1/4 c. chopped mixed herbs (parsley, chives tarragon); 2 tbsp. heavy cream; Salt + pepper; 4 tbsp. grated Parmesan 350ºF. Slice off top of dinner roll. Remove some bread to hold egg. Reserve tops. Crack egg into roll, top with herbs + cream. Season with salt + pepper. Sprinkle with Parmesan. After eggs cooked 20 min, place bread tops on baking sheet + bake until golden brown. Sit 5 min. Place tops on rolls + serve warm.
