Low Carb ice cream cake (THM S) by Julie Martin Note: Best to make this the day before serving so it can chill/ set overnight. I made this for a Labour Day bbq and it was a huge success! It is actually composed of 4 separate recipes that I stuck together.... Make ice cream. Freeze several hours or overnight. Meanwhile, bake the crust. Let it cool, and make the caramel sauce. Pour caramel over crust in springform pan. Freeze. When ice cream is firm enough, press it into the pan over the chilled caramel layer. Freeze again. When ready to serve, top with whipped cream and drizzle with chocolate sauce. Ice cream (make this first) 2 cups heavy cream 4 cups half 'n half 2 cups granulated sweetener, measured first, and then ground to a powder 2 Tbsp vanilla or caramel extract 1/4 tsp salt 1/4 cup cocoa (optional) Make according to ice cream maker instructions, or as I do, blend mixture and then freeze in metal kitchenaid bowl, stirring every hour or so. Crust: (doubles as a cookie recipe) 1 cup natural almond butter (could use peanut butter) 1 egg 3/4 cup sweetener (I use homemade "truvia") 1 tsp vanilla 1/4 cup (1/2 stick) butter 1/2 cup sugar free chocolate chips (I use THM skinny chocolate) Press into bottom of sprayed springform pan. Bake 350°, 20 minutes or until golden brown. Allow to cool completely. Caramel Layer: I made the xylitol version of the caramel topping recipe found here: mariamindbodyheal... Chocolate sauce (THM FP): 2 cups water 1 cup cocoa 1 cup sweetener 2 tsp vanilla Mix well, bring to boil. Cool.
