If I do say so myself, this soup turned out GREAT, and because it makes use of several "convenience" ingredients, it can be thrown together for a weeknight dinner. I also think this would make a terrific potluck dish that people would just love. In fact, as this recipe makes at least four quarts of soup, I will be taking my leftovers into share with my lucky co-workers! ;-)
Chili's Chicken Enchilada Soup...in the Crock Pot!...another big WIN! I also added a can of green chilis for extra flavor. Makes a huge batch!
I thought Taco Spaghetti was possibly two dinners, smashed into one, so it sounded appealing, but it's actually an amazing casserole. More like Chili Mac than a Taco, really, this is a good meal served with Tortilla Chips and a Green Salad. Reserve your judgment on this one until after you try it. TIP: The recipe calls for a cup of black olives. I love olives, but I think it needs about a quarter cup. Plus, I baked mine for at least 30 minutes, until it got golden brown. Yum.

Sour Cream & Bacon Crock Pot Chicken 8 bacon slices 8 breasts 2 (10 oz) cans roasted garlic cream of mushroom soup 1 c sour cream 1/2 c flour Salt and pepper to taste Place the bacon in a large skillet and cook over medium-low heat until some of the fat is rendered. A friend of mine brought me this when I had surgery. Now it is my "go to" dish for taking to people who have had babies, surgery, etc. 4-6 raw chicken breasts, new potatoes, green beans (fresh or canned-really any green veggie would work. Broccoli is good, too). Arrange in 9x13 dish. Sprinkle with a packet of Italian dressing mix and then top with a melted stick of butter. Cover with foil and bake at 350 degrees for 1 hour. Enjoy!
