Chocolate Mint Cookies - SO gooey and yummy. If you can't find andes mints, you can add 1.5 tsp of peppermint extract after the eggs instead. I recommend refrigerating the dough overnight...cookies are less fluffy/more dense. After the chocolate has melted on top, expedite the process by putting the cookies in the freezer until the chocolate is set. The cookies are the best served cold!
