Cool Cucumber Salad 1 med. cucumber ¼ cup apple cider vinegar 1 tablespoon chopped fresh dill, plus sprigs for garnish (or your favorite herb) 1 tsp honey 1 tsp lemon juice Salt & pepper to taste Prep: Peel & thinly slice the cucumber. Put the slices in a bowl and set aside. In a separate bowl, whisk together the vinegar, dill, honey, and lemon juice. Pour over the cucumbers and toss to coat. Season with a little salt and pepper. Cover and refrigerate. Serves 1.
Grilled cabbage. If you have never had it grilled you are missing out! Cut a head into 4~6 peices, put each on a piece of foil add a couple spoonfuls of butter, and top with bacon if desired. I also season it with season salt.

Pepperoni Cups - Another quick What's for Breakfast solution. I used the extra large pepperoni. Just line a muffin cup with the pepperoni. I use one egg per two cups. Today I stirred in some pesto, black olives and a bit of cheese. Cured a pizza craving! Baked them up and topped with a little more cheese. I do love cheese. I like mush
