Creamy Artichoke Spinach Dip (without the junk)

Jeff Novick's burgers made with veggies, brown rice, and beans. And sweet potato wedges!

Steam-sauteed kale & garlic w/ balsamic vinegar, quinoa cooked in "chicken" broth, and potatoes tossed in lemon/salt/pepper.

My veg version of sausage, peppers, and onions. I used portobello mushrooms and marinated them in a carribean seasoning, cook them in a pan, and slice :)

Garlic & ginger oven-roasted tofu, corn, watermelon, and "creamy" kale.

Healthy Salad Dressing-- these are just suggestions, so don't limit yourself! I usually mix tahini and some kind of citrus like grapefruit, orange, tangerine, or lemon. With these dressings, I don't have to feel guilty about drenching my salads :)

Black Bean Brownies-- Yes, you read that correctly! These brownies are dense and fudge-like because they are flourless. They don't taste like black beans (or beans at all!), and they're super easy to make!

Strawberries Dipped in Chocolate-- I use vegan chocolate chips... YUM! and only 72 calories

Homemade Hummus-- I add 1/4 to 1/3 cup of sundried tomatoes to give it a delicious tomato flavor. It yields a lot, so I eat this for lunch multiple times a week. I eat this with carrots and bell peppers that I cut into sticks, buy fresh black olives, and buy pita bread which I cut each into 6 triangular pieces and bake at 400 degrees to make pita chips.

Happy Herbivore Beer Bread-- the easiest bread to make and a yummy snack! I use Sam Adams; I find that the dark oatmeal stout that is suggested makes the bread too bitter for my taste, but use any beer you want :)

Happy Herbivore Chickpea Tacos-- These tacos are filled with flavor; I usually use kale as taco shells and top them with salsa and homemade vegan sour cream-- and voila! (The mixture also yields enough for two 15-oz. cans of garbanzo beans)
