Easy Mushroom Quinoa "Risotto": 1. cook quinoa in veg broth 2. saute onions & garlic in veg broth 3. roast mushrooms in seasonings, then chop. Add to onions and garlic. 4. add quinoa to mixture, throw in a little Dijon mustard for creaminess, seasonings, and more broth if needed.
