Quinoa black bean tacos! Vegan, just quinoa cooked in vegetable broth (2 C veg broth per 1 C quinoa), black beans, romaine, halved cherry tomatoes, tortillas, and organic salsa. Delicious! And soooo easy.

Vegan Oatmeal Pancakes! My own recipe from many trials. Mix: 2 C whole wheat flour, 1 1/3 C quick oats, 3 tbsp agave, 1/4 c brown sugar, dash salt, 2 tsp vanilla, 2 tsp cinnamon, 1 C almond milk (Almond Breeze 1/2 almond, 1/2 coconut), add water til pourable. DONE! The recipe makes 10. A serving is 2 pancakes, 290 calories per serving, 2g fat, 9g protein! Top it off with whipped Earth Balance vegan butter and medium amber organic maple syrup and enjoy. So many add-ins can change it up too!
