I loooove sweet potato fries – soak in water for 30 minutes, toss in cornstarch, drizzle with olive oil bake 15 minutes at 425, flip and bake 5 more minutes. never knew how to get them so crispy! Yum!

Homemade chicken nuggets-Tried these and not only are they some of the best chicken nuggets i've had, they cost less than a bag of processed nuggets, and I once cooked up and popped in the freezer I have the same ease as store bought nuggets-very excited about this!! Plus there is a great honey mustard dip at the bottom of the recipe :).

Another pinner says : "These are easy to make: Just mash potatoes plain with butter or you can add yummy ingredients like cooked bacon, cheese, parsley, green onion etc. Stuff in to a greased muffin tin, run a fork along the top and brush with melted butter or olive oil. Incredible Baked Meatballs. Sound Yummy! -1lb hamburger, (grass-fed if possible) 2 eggs, beaten with 1/2 cup milk 1/2 cup grated Parmesan 1 cup panko or bread crumbs 1 small onion, minced or grated 2 cloves garlic, minced (to taste) 1/2 teaspoon oregano 1 teaspoon salt freshly ground pepper to taste 1/4 cup minced fresh basil ~Mix all ingredients with hands. Form into golfball sized meatballs. Bake at 350 degrees for 30 minutes.

Gotta try this...string cheese chopped into bite size pieces, dipped in milk and bread crumbs, baked at 425 for 8-10 minutes- serve with marinara sauce! It's baked not fried!

1 ripe banana + 2 eggs = pancakes! Whole batch = about 250 cals. Add a dash of cinnamon and a tsp. of vanilla! Top with fresh berries! low carb
