“The Biggest Loser” salad that almost no one can get enough of. 1 head fresh lettuce, 1 bunch fresh basil, 2 fresh in-season tomatoes, 1 cucumber, 1/4 red onion. For dressing-1/3 cup olive oil, 4 tbsp lemon juice,1 tsp honey, salt and pepper, to taste

Stuffed Breakfast Peppers 3 large eggs Dash Salt 1/2 tsp Olive Oil 1/2 c sliced Mushrooms 1/2 chopped onion 2 c Spinach 3 medium Bell Peppers, cut in half. (Cook 5 halves. Use 1 half in recipe) In frying pan, cook mushrooms & onions, 1/2 of 1 red pepper & spinach in 1/2 tsp olive oil. Season to taste. Distribute mixture evenly into pepper halves. Lightly beat eggs. Pour into pepper halves. Bake at 375 for approx 40-45 min or till eggs are set.
