Baked Apples with Oatmeal Streusel Topping - 1/4 cup melted butter, 1/2 cup oats, 1/2 cup flour, 1/2 cup brown sugar, 1 tsp cinnamon, pinch of ground ginger, pinch of salt - Fill and top apple halves with the mixture. Bake at 350 until tops are golden brown, about 30 minutes. Sounds great for breakfast or dessert!
Blueberry Peach Smoothie: 1/4 cup frozen wild blueberries, 1/2 cup frozen peaches, 1/4 cup plain or vanilla Greek yogurt, 3/4 cup milk, 1-2 Tbsp honey, 1/4 tsp pure vanilla extract, crushed ice ( optional). Blend all ingredients until smooth.
