Microwave for one min OR bake at 350° for 10-15 min. Top with icing made with two tbsp cream cheese, 1 tsp butter, 1 tbsp Greek yogurt, a dash of vanilla and sweetener to taste.

    I tried these today. Didn't have cottage cheese, used 0% strained yoghurt. Taste was wonderful, much better than the flax S pancakes, but they resembled more sweet scrambled eggs than pancakes. They didn't hold together well, fell apart. Still I ate them with butter and made my own sugar-free syrup (boiling water, xylitol, maple flavoring, vanilla essence - cooked for a while in the microwave). I just made a 1/3 of the recipe using only 1 egg.

Naan - 4 eggs, 1/4 cup coconut oil, 1/2 cup coconut flour, 1/4 tsp baking powder, 2/3 to 1/2 cup coconut milk or water, 2 pinches salt, mix, cook on skillet
