I made Eggplant Pizza for dinner this week. Cut up eggplant into circles, add olive oil and spices, put in oven at 400 for 20 mins, add sauce, cheese, spinach, pepperoni and anything else you want, put back in oven for 10 mins.

I make these every year for Christmas breakfast and they are fabulous! "Crack Sticks aka Cinnamon Cream Cheese Roll-Ups: Oh My Goodness!
