Healthy Chocolate Muffins....A cup and a half of green vegetables in this muffin mix. - These are really good, I substituted Splenda Brown Sugar Blend and chopped my brocolli in the food processor. Oh, and I baked mine in a large muffin tin, it filled them almost halfway and made 6 good six muffins. Yum!

This is really good, had to sweeten it more after it cooked, but thats ok caz I use Splenda and my son uses regular sugar. Also, my son hates coconut but really liked this.

Biggie Microwave Banana Oat Cakes - omgosh, I'm so addicted to these, Weds. I left out cinn and used a heaping spoon of p-butter, was good, but today I used coconut and choc-chips, no cinn, this was my favorite so far, bought more bananas to keep experimenting, yum!
