Strawberry Balsamic Chicken--4 chicken breast, 1c balsamic divided, 1 pint strawberries chopped, 4oz fresh mozzarella balls chopped, 1/4 chopped basil: 1/2c balsamic & chicken in ziplock to refrigerate up to 5 hrs, bake 30 min. Boil then simmer remaining 1/2 cup balsamic to reduce by half. Combine strawberries, basil and mozzarella for caprese topping. Top chicken, drizzle with reduced sauce
Zucchini Chips - 1 lg. zucchini, 2 Tbsp olive oil, kosher salt. brush oil on each slice of zucchini. sprinkle salt onto the cookie sheet of slices. do not over season. 225 degrees for 2 hours or until they start to brown and aren't soggy. Let cool before removing. Keeps for only 3 days in airtight container.
