Healthy Vegan Blueberry Pie Pancakes. My new favorite pancakes. I doubled the recipe, used 1 Tb. coconut oil in place of 1 Tb. of milk, and added a flax egg (1Tb. ground flax + 3 Tb. water, let sit for a couple of minutes, then add with the rest of the wet ingredients). So divinely delicious and it didn't need any additional toppings.

Fruit filled German pancakes made in muffin tins - these are really fun, but you have to make a lot *update* I made 2 1/2 batches and it fed 6 adults and 4 kids with probably a dozen leftover. Each batch does approx. 18 in a regular sized muffin tin. The triple berry sauce was delicious and it saves in the fridge for at least a month! Great as a spread on rolls as well @Influenster @dinolingo

Caramel Apple Pancakes-- yes, these are every bit as good as they look, probably better! The cakes were AMAZING, moist & flavorful, and the caramel drizzle (I just melted caramels) with the fried apples on top was awesome! Great fall breakfast... or dessert. * these were sooo good. Will be my go to pancake mix!
