Pizza muffins - I just made these and they're pretty good and very easy. Next time, I'll use skim milk mozzarella instead of whole milk cheese, cuz they were a little squishy. Also, they puff up more than I expected, so don't overfill the muffin cups. And, I used 4oz of mini pepperonis, and that worked well.
